Shiitake has a hemispherical cap, measuring between 5cm and 25cm in diameter. Its initial colour is almost black, becoming lighter over time. The shape of the cap can sometimes be irregular, but the rim is usually curled in the beginning, becoming flatter as the species reaches maturity. Another important indicator of the mushroom's development comes from the white marks that appear on the cap, which become darker as the mushroom gets older.
